Got my Williams kit Thursday with the Kolsch extract kit. So what do you do when it snows in Missouri in the first week of spring? Go ahead and brew your first batch!! Spent the morning cleaning and sanitizing, waiting on the water to boil and will start the process. Adding a little lemon zest at 15 minutes to give the kolsch a little more summer feel. Make it not so much a kolsch, but the SWMBO will dig it. Got my Rhinelander beer shirt on from college to remind me of truly horrible beers. :) And everyone who said you will break your hydrometer was right. Broke it right after I cleaned it. Grr. Got 2 more on order. Pics and details to follow. Wish me luck and good brewing!

Adding the extract.

When you get snow about a month after you should, use it to cool your wort. Take THAT, weatherman!

Straining and aerating.

Instead of pitching the yeast, I decided to add it to the wort.

I pitched the yeast 3 minutes ago and I don't see any airlock activity!! Is my beer ruined???

Well, now the waiting begins. 2 weeks or so in the fermenter is likely. Next Saturday is a BIAB try. Doing the Reaper's Mild that gets rave reviews.

Good times!

If your airlock activity does not start in 20 minutes, it's probably all over with. It's nice to see the SWMBO helping out! Did you get to choose the first batch? My first three batches were all chosen by my SWMBO, kind of like an offering to the financial goddess........

I chose the kolsch with her in mind. She was having her first kolsch (Schlafly) that afternoon and enjoyed it. I thought it would be a good summer beer. Later in the summer I'll brew a chocolate coffee stout for her to be ready for tailgating season. (We have season tickets for Mizzou)
When I brew an IPA that will be all for myself!

Kolsch is my favorite homebrew so far. Don't worry about the airlock, all is good!

P.S. Thanks for sending Yost our way. Regards, Wazzu.

Got my Rhinelander beer shirt on from college to remind me of truly horrible beers. :) --- now why would anybody admit to drinking that swill?? JK. My SWMBO is from Rhinelander ...I can honestly say I've never tried it.. Looks like you're off to a good start. Cheers!

College was more about quantity, unfortunately. I think it was $6/case. Ugh. We did write a song about the beer though. Hoo Dee Hoo!
