I just dipped into my first brew. two weeks after bottling. It's definitely fizzier than I expected. I couldn't drink it from the bottle so i just poured it into a pint glass and let it air out for a second. I brewed a strawberry wheat and I wasn't so sure it would come out after reading a post about not stirring your beer when mixing in the sugar for carbonation. Well, stirred my beer pretty damn vigorously.

All in all it's a good beer. It's better than I expected, and alot stronger too! This forum helped it happen!

Now accepting suggestions on batch #2!
 
Grats on the first batch working!

Assuming that you are using priming sugar and not force-carbonating those bottles, you don't want to drink straight out of them anyway; pour it smoothly into a glass so you don't kick up the yeast trub at the bottom of the bottle, leaving that last bit of beer behind so it tastes clean.

You may have just had too much priming sugar, always watch the amount. Also, if the bottles all end up being a bit to fizzy, just chill them down a bit more before cracking them open. I have a saison that is super carbed and it needs to be chilled or else it fountains out. Damned tasty though.

You made a wheat, now make a porter or stout so you can have a dark deep malty brew!
 
Search for Revvy's blog about bottle conditioning. There's a link to a video clip in it that shows carbonation changing over 3 weeks. Hang tight for another week and then try again. I found that at 1 week i was very flat, on week two way over carbed. According to the video you'll see that by week 3 the carbonation is fully dissolved into solution. Wait a week and try again. My first beer is 2 weeks + 2 days into conditioning and my beer looked exactly like the videos on week 1 and week 2. YMMV

@Tall Yotie, The thing is, I'm not a big fan of the darker chewable beers myself.

i'm not a big fan of the darker and/or hoppier beers myself. don't know if you used a kit or not for your wheat but if so we brewed the brewers best red ale for the 3rd time this weekend. it's a nice middle of the road beer. i'm a fan of the wheats but have yet to find a kit that i really like. FWIW you might give the red a try.

Altbier Altbier!

Pretty middle of the road as far as malt to hops, but a great amber color to show off.
