first braggot attempt - yeast question

Hello all!

I am going to attempt my first braggot this weekend and here is the recipe:

7 lb - 2-Row
1 lb - Crystal 40
1 lb - Vienna

10 lb - Honey - added at flameout

1 oz - Nugget - 60 minutes

Should I use US-05 or D-47? Would D-47 take it too dry?

If you can keep it at 65 F or lower, D47.
Otherwise US05.

Wyeast 1388 would be better if you can do a starter.
 
Bit of a poor question without full details.....

If that was a 5 gallon batch the US05 would likely take it dry too......

D47 is a 14% yeast but wouldn't likely go completely dry because of the unfermentables from the grain......
