So I decided I wanted to make a red and add strawberries. It is a five gallon batch with 4 lbs of strawberries put in on second rack for five days on bottling day i took a taste, there was a large strawberry taste but the red came through at the end it was a good but I was hoping for a more beer taste. Will I get more beer taste with aging or will I have the same taste in a few weeks regardless?
 
The fruit sill mellow some with aging. What you could do is add it earlier in the process when fermentation is more active. The out gassing on the Co2 will take away some of the flavor and aroma, leaving you with a lighter taste and aroma.
