I was kinda impatient Friday night and opened up a 'half' beer thats only been bottle conditioning for a week. It was the last beer we bottled and only filled halfway. I thought what the hell, i'm gonna pop this thing. Given we have been tasting this beer pretty much throughout the entire process, I sorta knew what to expect.

Details:
We did two months of research, bought all the best equipment we could afford, then proceeded to recreate one of our favorite beers, Zombie Dust, using the famous clone here on HBT. We made a few tweaks/mistakes that might have led to this beer being.... perfect.

Batch Size: 5g
Boil Volume: 6.5g

0.50 lb Carafoam (2.0 SRM) Grain 5.9 %
0.50 lb Caramel/Crystal Malt - 60L (60.0 SRM) Grain 5.9 %
0.50 lb Melanoiden Malt (20.0 SRM) Grain 5.9 %

6 lb extra light DME

1.00 oz Warrior [12.40%] (60 min)
1.00 oz Citra [12.40%] (15 min)
1.00 oz Citra [12.40%] (10 min)
1.00 oz Citra [12.40%] (5 min)
1.00 oz Citra [12.40%] (1 min)
3.00 oz Citra [12.40%] (Dry Hop @ 21 days for 5 days)

Wyeast 1076


The changes/mistakes we did: accidentally using 6lbs DME instead of the recommended 7lbs... we chose to use Warrior instead of Citra for our bittering hops, and we the yeast we chose was 1076. I believe our beer turned out really well because we did a full volume boil using a turkey burner. We also used 6.5g glass carboy with a water bath of 67F. Also, we let it sit in the primary for almost a month. Everything I have read about bulk conditioning seems to be very true. Patience pays off.

Well anyways, although the beer wasn't fully carbinated.... it is frickin incredible. It is one of the best beers I have ever tasted. Everyone that sipped it agreed that if it was available in the store, they would buy it. I have had more than a fair of Zombie Dust (i'm in Chicago) so I am able to compare this to the real deal and, honestly, it is better than the last batch of Zombie Dust i had. In a blind taste test, I might not be able to tell the difference. I say it was better than the last batch of ZD i had because it was, no joke, awful. Two of the worst ZD bottles i have ever tasted and they were fresh too. it was weird.

But ya had to share my success story, i can't imagine how good its gonna be in 3 weeks after a good month of bottle condtioning.
 
Congratulations! And welcome to your new hobby/addiction. It's a great feeling to taste an awesome beer and be able to say "I made that" I'm guessing you'll find that you have a lot friends willing to sample your beers and give you feedback.
