So my girlfriend decided to get me a homebrew kit as a gift and she decided to go with an amber ale from truebrew. This was my first attempt at brewing my own beer and I found the directions were pretty straight forward and easy to follow. The wort has been fermenting for 7 days now and has pretty much reached the desired fg. The directions say to bottle after one week, but I've read its better to wait at least 2-3 weeks, any ideas?

Definitely don't bottle until it gets to 3 weeks.

The less you open the fermenter the better, especially with all that airspace above your beer...oxygen can cause off flavors in beer.

1.018 SG reading likely means it's not done fermenting fully. Amber ales should finish closer to 1.010-1.012

I stick with the 1, 2, 3 rule:
1 week in the primary
2 weeks in the secondary
3 weeks in the bottle.

But to each their own...

Haha I don't drink budlight, I drink Sierra Nevada, those are from when my roommate had a BBQ. And yada yada on the smoking.
