First Amazing Cider

I've made hard cider a few times now, as it keeps the wife quiet about my brewing and some of my guests really enjoy it. For the first time ever though, I made cider that I actually really enjoy and has gotten amazing reviews from the 6 people who I've had sample it.

My procedure was as follows.

4 gallons of Tree Top Apple juice
1T yeast nutrients
1lb Dextrose disolved in hot water

Fermented for 3 weeks with EC-1118.

Backsweetened with 1 Gallon of Tree Top Apple Juice(thought it was a half gallon jug, wasnt paying attention) and a half gallon of Black Cherry Juice. I kegged and forced carbed @~17psi.

Not exactly the strongest ABV, but it is extremely tasty. The low ABV actually works out great as the wife has a low tolerance for alcohol and gets an upset stomach if she develops anything more than a slight buzz.

The flavor profile almost reminds me of a framboise. It's tart with just enough sweetness and you just get a subtle hint of dryness.
