So I did my first AG batch last week and it went smoothly. Planning on doing another batch but wanted to double the size. My setup is a 15 gal keggle and a 12 gallon MLT so i have the capacity. Im really just wondering about ingredients. Should I just double my water, grains, hops and yeast and use my 2 6.5 gal carboys? Do I need to double my mash time or boil time?
 
Yes, you more or less need to just double all the ingredients. The mash time and boil time should not be too much different from your 5gal batch. It will likely take quite abit longer to get to a boil and your boil off rate might be proportionally lower so it may take slightly longer to get to the desired final wort volume.
