Why do people complain about fermenting smells from -anything- ?

Hey you are making alcohol in your home, be grateful and suck it up. It's a biological process after all.
 
I ain't sorry. Oak, Grapes, Berries, Yeasties, maltyness, hoppiness and that fermenting stuff smells like frickin heaven to me. You don't like it? Go make some perfume and stop cluttering up the threads with this Blasphemy!

I dont think I complained at all, more of a statement than anything.

I've never had an unpleasant smelling fermentation; not even Ed Wort's apfelwein with the montrachet. I've always thought they smelled of fruit, honey & wholesome yeasty goodness & I often put my nose right up to the airlock to get a good whiff of the stuff. I always use nutrient, energizer & a little xtra DAP in all my fermentations, maybe that has something to do with it. Regards, GF. :)
 
I think it's Di-Ammonium Phosphate- a yeast nutrient. I don't use energizer very often, but I do use yeast nutrients in almost all of my wines. I don't really have a reason, except "can't hurt, might help".
 
I love the smell of fermenting wine. But then again, I like the taste of it too. I think you are supposed to let it age, but there's just something about the active yeast on your tongue as you steal a giant gulp of two day old wine ... booyah!
 
maybe its the fermenting wine/catbox combo thats sticking so badly

put my nose right up to the airlock and it doesnt stink too bad, but neither does the cat box

in any case, i just leave the fan on in the laundry/catbox/fermentation chamber

If it's still stinking, try adding yeast nutrient, yeast energizer & maybe a little xtra DAP (diammonium phosphate) to your must; it works great for me. Regards, GF. :)
