Hi all.

I was wondering if anyone here used demijohns for fermenting?

I wanted to separate out a gallon at a time, but cannot find anywhere that offers a carbon filter lid to seal it with so odour is eliminated.

I have thought of using a brewing bucket (with the smaller lid), but again, I cannot find any replacement lid that allows me to have a carbon filter on.

Any help is appreciated.

A demijohn for fermenting (or as the secondary) is standard. But I guess I don't understand what you mean by eliminating the odor. That is , I know what the words mean but what "odor" are you trying to eliminate? Ethanol at 10- 18% does have a smell but the smell is not overpoweringly bad. If you stress the yeast they may produce H2S and that smells like rotten eggs but the solution is not a filter. The solution is not to stress the yeast.
Are you perhaps in a place where making wine or beer is punishable?
