Hello all, So I brewed a maple pumpkin ale which lacked the maple flavoring I had hoped for, so I stabilized it then back sweetened with more maple syrup. The problem is, is that I enjoyed the beer before back sweetening, but now I don't like it sweet and there's still no detectable maple flavor to it. Ok, lessons learned...don't bother brewing with maple syrup again unless using a maple extract and never back sweeten a beer!
Now my two part question is...does the potassium sorbate and potassium metabisulfite stop working after a given amount of time and if so can I repitch some yeast to ferment it back down? Also, I force primed the beer already. Will this be a problem somehow?
Thanks in advance!
