I made a batch of Carabu Slobber about a month ago.
It went in while it was still warm out.

It began fermenting right away... vigorously.

Then it got cold out and I caught my fermentation chamber down to about 58.
It has had yeast floating as a thin layer on the top with a tiny amount of bubbling going on.
Yesterday I took a hydrometer reading to make sure I was done... nope.. 1.020!
Crap.. should I bring it in and see if it starts back up or warm it up some and re pitch?

Get it in and up to 68-70F. See what happens. Since the bulk of fermentation is done a little more heat is not going to generate any off flavors.

extract or all grain?
if all grain, what was your mash temp?
what yeast did you use?
& yes, warming it up a bit and/or gently rousing the yeast may help it finish up.
or, it might already be finished...
 
It is probably finished. It is a malt forward beer, it is supposed to finish pretty high.
If I remember right, I think I needed a fork and spoon to drink a the last Carabu Slobber that I had.
 
Did you use Windsor ale yeast? Windsor doesn't attenuate very well. You can finish it off with a half liter vitality starter of US-05 or WY 1056. The flavor has been set by the Windsor. The US-05 or 1056 will take the SG down to about 1.011 to eliminate the sweet and syrupy body.

Same here. I didn't like Windsor yeast, or the carabu slobber kit. Probably finished, especially if it was extract.

Caribou Slobber was among one of the first 10-15 kits I tried. Had a hell of a time working my way thru that keg. Maybe I didn't do it just right or I really didn't like the beer that much. Anyway, I soon thereafter started AG and all has been well since!

OG was spot on for my extract kit.

If it is finished... Gonna be sweeter than I like...
I think I will bring it inside.

This is my second full size batch. I think Santa is getting me a big 10gal cooler to mash in :mug:

If I remember correctly my Caribou Slobber kit turned out beer that was sweeter than I prefer. It must be characteristic of that particular kit and yeast combination.

You'll be smooth sailing once Santa drops off the mash tun and gets you into AG!

I brought this inside and I'm seeing airlock activity again.
I have little spots of bubbles all over the surface.

In a couple more days I will take another hydrometer reading and decide what to do.
 
I have an update... Beer only came down to 1.018 so I went ahead and bottled it on Christmas.

Holy cow this IS a do over beer for me. Best beer I've made so far.
Nice malt forward flavor with a nice hop balance on the end so it doesn't come across as too sweet.
