Hey there, I bought a coopers lager micro kit today, just reading through the instructions it says that while fermenting the wort i should keep the enviroment temp between 21-27 degrees celsius, from what ive read the fermentation will stop if the temp drops below 21C, if it does will that ruin the wort? or does the process work ok if i bring the temp back up again?

I'm guessing the kit included an ale yeast as 21-27C is too warm for lager yeasts. Generally if you let the fermentation temperature fall too low the yeast shut down, floculate and fall to the bottom and you end up with a stuck fermentation. It is hard to get them going again even if you rewarm your beer.

FYI as soon as the yeast is added to your wort the liquid is referred to as beer - even though it isn't done yet. Go figure.

It won't always stop at lower temps it will chug away slower. Then after awhile drop out. Try to keep the temp right and you'll be fine. Slightly lower temps require more time, higher temps less. Higher is not usually good, (higher than prescribed) more esters and off flavors are a end result. It also creates fusel alcohols which are prone to causing killer hangers.

The yeast is pretty forgiving if you are in the ballpark and are patient. :rockin:
