So I decided to brew my 3rd brew yesterday (Nov 7) and I was pretty proud of myself for making the least amount of mistakes yet. It is now happily fermenting in the bucket. I came into work today to find out that I am being sent to Taiwan for 5 weeks starting on the 19th of Nov.
After reading a bit around here I have found that leaving the brew in the primary for 3-4 weeks isn't bad, and that is what I have done with my last brews as I don't have a secondary. But how about an extended time in the primary, like 8-9 weeks? This is an Imperial IPA that will also need to be dry hopped once I get back. Can I rack it to my bottling bucket early and let it sit there for 7ish weeks? Or should I just let it ride, and dry hop when I get home?
Thanks for any advice!
