Has anyone ever used something like this to create a chamber? Seems like a way get lot of storage, with minimal space. Shelves being metal mesh, it would allow the temp to circulate easy. Looking for a place to long store sours. Was hoping to see someone else's, before reinventing the wheel.
 
I haven't made a fermentation chamber, but I have shelving like that, enclosed on three sides to keep small items from being pushed off. OSB bolted through the metal stiles using standard 8 x 24 thread stove bolts.

Fermentation chamber could be enclosed with 1/4" plywood and sheet insulation laminated to the plywood. Solid wood frame where hinges would be installed.
