I recently switched my fermenting chamber from my fridge to my chest freezer, and turned my fridge into my kegerator with tap handles. When I used my fridge, it held pretty tight temps. Now that I moved it into my chest freezer, i get swings +- a couple degrees C. Im using a STC 1000 controller, a paint can with a bulb heater, and a fan that constantly runs. My probe is inside of the bucket in a thermalwell. Any sugestions.
 
I had that issue and narrowed it to two choices:
1. Put a thermowell in your fermenter
2 . Tape the temp probe to the outside of your fermenter covered with insulation,

I opted for the thermowell as I use a Big Mouth Bubbler with two holes in the lid. Once the liquid has stabilized, the temp swings aren't so severe.
