I just noticed this in the FermCapS description on the MoreBeer website:
I regularly reuse yeast, either by rinsing or repitching a slurry, and the notion that this stuff absorbs "onto the surface of the yeast cells" kinda has me concerned. Should it? Anyone notice any problems reusing yeast when FermCapS has been added to the fermenter? I've used it in starters and during the boil without problem, but I've never used it in the fermenter before.
Eliminate the head on fermenting beer and brew a larger quantity in your existing fermenter. Foam control - also known as FermCapS - does not affect the head on your finished beer, but can actually increase the head by retaining head-forming compounds that would have been blown off during ferment. It will settle-out of beer before bottling or kegging as it is actually absorbed onto the surface of the yeast cells and filter media.
