So I brewed a cream ale on Sunday 7/20. I took a refractometer reading at flame out and read 11.5 brix/ 1.046, I just took a drop and figured it would cool enough. Just to be sure I took one more reading when I was pitching the yeast and read 10.8brix/ 1.043. My question is after just two days of fermentation it appears as though it stopped and I now have a reading of 5.5 brix/ 1.008. Is that possible to be done that fast?
5 gal batch using us-05
Protein rest with 1.25lb flaked corn and 1.25lb of 2-row for 30 min.
Stepped up to 147 and added the rest of the grain 4lbs 2-row and
.650lb of caramel/ crystal 20 for 35min. And stepped again to 158 for another 30min. Boil was for 90 mins.

Ive had fermentations be solidly done in 3 days. Its possible, its a lower gravity beer, and a fermentable wort. Id give it another two days, it may drop a bit lower.
 
Yep- I did a CDA with about 1.060 og and it was down to predicted FG of .014 in 3 days. US-05, rehydrated and properly aerated wort will do that.
 
I didn't taste the sample. I just took enough to put on the refractometer with a dropper. It's reassuring to know it can finish that fast. There is still a lot of foam on top. I was planning on letting it sit for the rest of the week then check again and bottle if the next sample is the same. Thanks for your input, it's appreciated.

Refractometers are not accurate after fermentation. The alcohol throws them off.
 
I did use a calculated app intended for the purpose of converting brix to gravity. It's called BrixCalc, I also went to another site online and received the same adjusted readings.
