Can you use 430 stainless for a false bottom? If not what is the highest grade?

It's not as corrosion resistant as other types, but with proper care it would probably work. I don't really know for sure though. The "highest grade" is very subjective to the intended purpose, but 316 is probably the most common for brewing and food preparation equipment.
