I wanna make some small batches (~ 1 gallon each). What type of containers would you recommend for the fermentation process? I was wondering if I might use just milk plastic containers as moonshiners do.

Any feedback would be appreciated.

Glass apple juice bottles or large glass pickle jars. I personally wouldn't brew at this small scale. 3 gallons for me is even quite small scale.

Take a walk around wholesale clubs like Costco, BJ's, or Sam's Club and get inspired. They have plenty of products in food safe containers at your disposal.

Look around garage sales and maybe you can find a old pressure cooker with a good seal. drill hole for pop off and fill with starsan mixture. Buddy uses this works well.

Carlo Rossi jugs?

Carlo Rossi jugs are my favorite.
4 liter jugs make better fermentors for 1 gallon batches than 1 gallon jugs. The tall neck is also not counted in the 4 liters.
(not much but it helps)
 
I make 1.0 gallon cider batches in a 6.0 liter clear glass wine jug from the grocery store that was about $13 with cheap wine in it (I made sangria with it) and a 1.5 gallon brown glass Clorox bleach jug that I got for $6.00 from an antique store.
 
I recently used a Rossi jug to oak a stout. Didn't want to mess up the whole batch by over doing the oak so I split it, let the flavors overdevelop a little and then combined the batch and let it age longer. Worked perfectly.
