When fermenting my beers the room temperature is typically around 65 degrees F. When I bottle my brews I leave them in this same room. Can you speed up the carbonation process by having them sit in a room whose average temp is 72-75? If this does hurry the carbonation process does it also help the aging process of the beer as well? For instance a lot of home-brewers I talk to say that even after a beer is fully carbonated it tastes better and better the longer it sits. Just wanted to see what people have experienced or what they have heard.

Thanks

72-75 will carbonate more quickly than 65. It's not like fermenting, where the higher temps can really affect the taste. Still, if you carbonate too warm, it might be detrimental, or you may even have bottle bombs. But my experience is that 70-75 is fine.

I suspect it would increase the aging process as well, but are you only doing it for 2-3 weeks? I wouldn't keep it at 75 long term.
