I've brewed a few ESBs now an have figured out where I prefer my bitterness level to end up. I've also read dozens of recipes to get a feel for the style. To hit my IBUs I have narrowed down my bittering addition to either 1 oz of Target or 2 oz East Kent Goldings. I'll be adding 2 more ounces of EKG for flavoring/aroma.

My question is will the difference between the Target and EKG be noticeable? I've read posts saying it doesn't matter if there's enough additions later and others saying it makes a big difference. I figure ultimately I'll need to brew it both ways and find out for myself but given how often I have to brew lately that could be awhile. Any words of wisdom would be appreciated.

I've used Target regularly for a stout, which has no later hop additions. The bitterness is there, but no hop character is noticeable. I would say use Target, which will let the EKG come through.

For me, I can't tell the difference with bittering hops, but some people have more sensitive palates. For the most part, the flavor and aroma will boil out on the bittering hops, but it does depend on type and amount.

id just use target, it'll be cheaper and the difference should be insignificant (very little flavor/aroma left after 60mins)
