Hey guys,
I have an ESB/EPA that had the following fermentaion schedule. How long and at what temperature should I age it for?...... Or should I just carb and drink?

  • 7 Day Primary @ 68
  • 7 Day Secondary @ 68
  • Kegged (today)

I have access to a 50 degree chamber and my 34 degree kegerator.

No need for a secondary on a beer like this and I generally let all of my ales sit on the yeast in the primary for a minimum of three weeks (the final week being a diacetyl rest), four for higher gravity beers. After that, keg and carbonate. I prefer the set it and forget it method of carbing. 46 degree kegerator, 10 psi for 2 weeks and serving pressure set to 6 psi.
 
Awesome! I've already done the secondary, but I'll keep that in mind. I've moved it to the kegerator and will carb it and enjoy it!

You really don't need 3 weeks in primary with an English style ale. 4-6 days can be enough for a best bitter, and you shouldn't need a diacetyl rest if you control the fermentation temps and pitch enough yeast. Just about to start serving a best bitter, after 6 days in primary and 6 days naturally carbing in the keg with some dry hops at 64F, it's ready.
