I very quickly glanced through this thread, so sorry if this has already been mentioned. But have you tried more than one thermometer?

My system was doing the same thing. I would lose an unreasonable temp within the hour. I was wondering how this was happening to me, but others on here can lose only a degree or so over an hour.

Skeptical, I tried a new thermometer and it held pretty steady. I don’t believe it was a calibration issue either.

Yes. I typically use a javelin thermometer. I love that thing, and I find it to be very accurate. Curious that it might be the thermometer, I tested it against an analog meat thermometer. Same issue.

Last brew I put in the Cube with the therm-port. I registered a 6 degree loss in 35 min (3 of which happened in the first 20 min). I lifted the bag, re-heated, and then lost another 5 degrees in the last 25 min.

I don't know why I'm losing so much heat, but I'm tired of fighting it. I'll be ordering a brew basket and a recirculating pump.

I hope your new gear solves your issue.

Weekend before last I did a 5gal batch, outside, and insulated during the mash with a kids sleeping bag. Outside temp was 70F. At the end of the 60min mash the temp was within 1/10th of a degree of where it started. Staying within 1 degree is not unusual, but I was surprised to see it within a tenth of a degree. I checked to see if the thermometer was working properly, and it was.
