This is a rough sketch I made as I'm brainstorming and I'm wondering if anyone can see a problem with this or if I am missing anything. It goes to a 5500 watt element from a 220v power supply. I want to wire the ssvr to a stc1000 then to a potentiometer for fine tuning power output.

This should work, but you need to feed it from a GFCI breaker for your safety. Water and electricity are a dangerous mix. Would also be good to have a double pole power switch to be able to control power independent of the SSVR. Also without the switch, the element is always at 120V potential. And finally, it is a good idea to add a power on indicator light so you know when power is on (although the display of the STC-1000 might serve this purpose.)

Ty! Also was wondering if anyone knew if I could just submerge the stc 1000 probe in mash Temps
