This is NOT a should I secondary post. I WILL BE using secondary for a chocolate stout. I did AIH all-grain double chocolate stout and will be racking on top of nibs. However, I do have a question after looking at the directions NB gives on their chocolate stouts - both all-grain and extract. They suggest a 2-4 week secondary for their extract stout, but a 1-2 week secondary for their all-grain stout. If you secondary, is there a reason you can think of why using a secondary for a longer time would be necessary with extract kits vs. all-grain? I did plan to rack this weekend (FG stable) and was just trying to figure out how long I should let it sit. Might rack, let sit for a week, then add nibs in weeks 2-3, but since it's all-grain, I thought maybe I should just stop and get nibs today, rack on top of nibs and let sit for 2 weeks total and then bottle. I am in no hurry to bottle the beer. It can sit for a while. Thoughts?
 
Kits in my opinion take longer for the flavours to develop and balance and to help get rid of that twang.

Im doing a chocolate porter monday and planning to do basically the same with the nibs but also adding oak chips after the dry nibbing. Want the chocolate flavour with a subtle oak. Planning to secondary for as long as i dont need the vessel. Will move to keg and let it sit until i want it, being a christmas beer, around that time, hopefully giving the flavours more than long enough to develop
 
There is no reason not to rack on the nibs now. If your FG is stable and it seems the purpose of the secondary is for the nibs then just doing it is the way to go. With a stout you are not looking to clear the beer. I would grab the nibs and rack on top. Taking steps away from the process is always better than adding so if you can do it all now then do it.

If your gravity is stable, rack right onto the nibs. I did an AG Robust Porter on 8 oz of nibs, absolutely fantastic. On my list to do is a RP with nibs, oak, and grand marnier.

Crush the nibs, you'll love the beer.
