I messed up and ordered pale wheat instead of 2 row. So, as a smart individual, I made an informed decision to brew anyway. Bubbling away now. Dunkel the Wise beer

2.5 lbs pale wheat
2.5 lbs dark wheat
4 oz Munich type 2
4 oz chocolate malt
0.5 oz tettnanger 3.4aa @ 60
0.5 oz tettnanger 3.4aa @ 10
Wyeast 3056 (saved from a honey wheat)
A scoop of coconut sugar @ 10

Step mash:
122 for 30 minutes
154 for 30 minutes
Mash out
Batch sparge (1 batch)
60 min boil
Pitched yeast starter while still settling down from fermentation and it took off quick.
10 days of fermentstion, another 3 or so to relax a bit. Bottle and Carb with sugar cubes. I'm thinking I can pop one after 3 weeks in the bottle. Drink fresh.

So, with my mistake, I will see what happens...
 
I wonder how well that will convert... the white wheat malt seems to have enough DP, but combining that with the dark might mean a lot of starch left in the wort. What was the batch size?
 
First taste last night

I do not recommend this much wheat malt. Got a bit of a bite. Experiment fail
