I made a Jalapeno Ale and dry hopped roasted jalapenos. I been sampling each day until I get the right amount of heat and flavor. After about a week I didn't quite get the right amount. So I roasted another one yesterday and added. I tested the beer tonight and I would say its right where I want it. I will not have time to keg this beer until Saturday. Do I just let it go another day and half or take the jalapenos out with a sanitized spoon? I don't mind a little more heat but not too much more. What would you do?

I'd would take another day. As the beer ages it, the heat and flavor will fade. So by the time the bottles are ready if will probably be back to where you want it.

I'd let it go. The heat will fade a bit over time with carbonation and conditioning. And, most of the heat extraction is going to occur within a few days, so the extra day shouldn't hurt.

At least that's been my experience with dry peppering with habaneros many, many times.

You can always add more later, but it's a little harder to take the heat out.
Haven't brewed with peppers but..
I brewed a beer with ginger and it mellowed significantly over time.
Anyway, a day or two shouldn't hurt.

When you used habaneros, how did you prepare them? Did you roast them, keep the seeds?
