I just brewed a clone of the Westvleteren 6 based on the recipe on Candi Syrup website and this (https://www.themadfermentationist.com/2016/04/westvleteren-belgian-blond-clone-recipe.html)

I was about to bottle soon but looking at recipes online I had the idea of maybe dry-hopping half of the batch with some Simcoe/Amarillo to see how it turns out. I really love that hop combo, but the only thing is I'm not sure how it would play out mixed with a Belgian type yeast/hops?

I used Hallertau/Styrian Goldings/Northern Brewer for the recipe to get a total of 40ibu. Anyone ever mixed these types of hops with something similar to Simcoe/Amarillo?
I'd only try it on half the recipe but if its really too different I'd rather just keep this batch as is.
 
What yeast did you use? That can play a significant factor on what flavors you want out of the beer. So if you have a spicy belgian yeast it might not play well with tangerine and oranges. Try to match the hop to the yeast profile.

I went with Wyeast 3787.
I could always dry-hop with the same hops but I only have Amarillo and Simcoe on hand, and didn't intend to get out to buy more Hallertau just to experiment.

I`m guessing the styles won't match?
 
I have made an American/Belgian IPA, Basically made like a heavy saison but with fruity/citrus hops and it was amazing. I dry hopped with amarillo, cita and galaxy.

This however was the beer I was going for, a Hybid. If you want a full Belgian then this won't be it.


Also FYI I have heard that Noble Hops AKA Hallertau has a horrible grassy taste/aroma if used for dry hop
 
Sounds good to me. Currently drinking an Amarillo tripel and it's tasty.

Your simcoe/Amarillo combo will be similar to Tank 7. Just don't overdo it.
 
That's encouraging.

Any idea as to the quantities I should use to dry hop for 2.5gal?
I think I have close to 1 oz Simcoe and 1 oz Amarillo left. I'd be tempted to put it all in and bottle in 3-4 days...
