I just bottled up 1 gal of sweetened, mixed berry wine. About 14% ABV after sweetening. I had a cup or so of dregs left, so I decided to drink them. Man was that good! I cannot believe how nice and smooth the dregs were. This is going to be some fine wine in 6 months or a year.

In fact, I might enter this in the state wine competition next fall. It would be 1 year old and should be a really good wine.

So how'd this end up 4 ya? Is it part of ur regular rotation? What's Ur recipe?

Gonna fire up my 1st try at this once I have a free Speidel....using a similar approach to my Welch's vino & faux ice cider -- combo Frozen concentrate & matching 100% juice. [emoji111]

I gave several bottles away as CHRISTmas gifts, and I got rave reviews from those who received them. So I was pleased. I plan to make another batch this summer. I'll try to dig up the recipe and post it. But to be honest, I am a not much of a recipe guy, I brew like I cook; a pinch of this and a little of that. However, I do always measure my SG and FG so I can hit my aimed for ABV.

What was ur FG? I'm a semi to sweet kinda guy....1.02 - 1.03ish is my Happy zone [emoji16]

Do you recall what berries you used and the yeast?
I did a raspberry and also a strawberry wine several months ago. They were good at 2 months, great at 6 months and ok at 9 months...the recipe I used had minimal sulfite I think.

Since I backsweetened I am not sure what the gravity was after that. But it finished around 0.998, then I stabilzed and added 1 cup of reserved must per gal. Using reserved must (was in freezer) sweetens a little, and brightens the berry taste. You can use as much or little as you like, but I find that 1 cup per gal is good for us.

I used triple berry; blueberry, blackberry and raspberry, because that is what I grow. As for yeast, I just used Red Star Premier (formerly Montrachet). And for sugar I always use Turbinado sugar. I like it better than plain white for all my recipes, wines, beers, and ciders.
