We want to do an AHS pumpkin ale brew this spring to drink in the fall. After reading every post I can find on this I'm looking for an opinion on this way to go.

We are going to buy two kits and do a full boil in a 15 gallon pot.

Start with 10.5 gallons of water to account for boil off and top off to 10 gallons in the fermenters if we run short before pitching (depending on OG).

Steep the grains according to instructions (doubled) and treat them as a BIAB with the pumpkin (doubled... canned... spiced seems like the way to go).

Cut the hops in half except for the late addition ones.

Thats my idea so far... any glaring issues here?

on a side note... is there any reason on a full boil you can't sparge the bagged grains when you lift them out with the wort from the kettle?
