double 5 gallon recipe .. for 10 gallon batch?

I'm new to all grain brewing. I can ferment 11 gallons in my conical. I want to put a final 10 gallons of good product in the keg. Is it "rule of thumb" .. to just double the ingredients of a 5 gallon recipe .. to brew a 10 gallon batch? Is it ... "OK" .. stretching this to 11 gallons .. to account for transfer loss .. testing .. etc? I don't have any computer software to help me calculate any ingredient amounts. I tend to just go a little heavy on my grain bill .. from a 5 gallon recipe.

Any info will be greatly appreciated.
