Don't store honey in basement

Bought the the honey in October, first batch of mead in November. December came.... problems. Went down last week and saw the bucket on the floor, I just knew it was going to be a pain. So this is a double boiler for 36 pounds of crystalized honey. This was after about 4 hours on the stove.

Same happens in a plastic bottle. Warm it up. That's the beauty of honey... it doesn't go bad.

The yeast don't care about liquid vs crystallized honey. They'll eat it all.
