Brewed a Dry Irish Stout yesterday. Went to work at 7:30 this morning and a few bubbles were just coming through the airlock. Looked good. Came home at 5:30 to find airlock six feet away and kreusen all over the ceiling (no, the wife didn't see it, I have it cleaned up, the dogs a I were pretty nervous about that issue).
The foam and mess was still pretty wet, and I have a proper blow off tube in it now bubbling away. How worried should I be about infection? Should I cut losses and dump it, or just pretend it didn't happen?
It is a pretty low OG brew so I didn't think I had to worry about a blow off, lesson learned.
