I use a Guinness Clone for my first brew, and I think something is not right with the taste! When I racked from the secondary to bottles I tasted the sample i drew out for the Hydrom. test. OG. 1.044 FG 1.012...... anyways it didn;t tast like any stout I have had before..almost sour! When I received the stout kit it had been sitting at room temp for about 2 weeks and the DME package had about a 2 in cut in it....(no I deal how it got there I got it as a gift) not know anything about brewing i used it! My question is could the open DME have anything to do with the off flavor or did I mess something elts up?

it might've gotten infected. Did you boil everything and sanitize well?

On the other hand, it could also just need some time to relax in the bottles. It can't hurt to give it time. In the interim, brew something else. No use crying over infected brew! :mug:
 
If it is directly out of secondary without carbonating or aging, I would guess that is the problem. Give it a couple weeks and try again.
 
The kit was from Arbor wine and beermaking supplies, and the recipe name was "guinness stout"
Ingredients

4 lb. can Ironmaster stout Malt Ext.
2 lb. Package Dark Malt Extract (the one in question)
! oz. Bullion Hop Pellets
1 oz. Northern Brewer hop Pellets
3/4 cup Priming sugar
yeast

I boiled the wort and sanitized everything! There was nothing growing in the primary or secondary! The only other thing i might have messed up is I left the hop pellets for the whole primary ferment. Is that ok? The recipe did not say otherwise!

No there's nothing wrong with leaving the hops in...
 
In my first brew, I left the hops in the primary and I should not have done it. It was akin to dry hopping (since they should have only been in the boil for 5 min!)...and it left my beer with a somewhat bitter taste initially. After some time, though, it did mellow out some. I think, like the others said, to wait and see.
 
I never used Ironmaster when I was doing extract brews, but they have a good reputation. I've read that Guinness uses ~3% sour additive and I personally use aciduated malt to get the Guinness 'twang' in my Irish Stout. Maybe they have added this component to the Ironmaster kit. Either that or the LME was old.

I'd recommend what others here have said. Let it finish out and see how it tastes. After three weeks in the bottle, it might have mellowed enough that it tastes a lot like Guinness.
