I had recently purchased one of the rectangle Coleman coolers to use as a mash tun, but unfortunately dropped the cooler and landed right on the ball valve. The drop caused the plastic to push in a little and made it impossible not to leak using the bulk head. The cooler does not leak though with the original spigot.

Any possible projects I could do in order put this cooler to use for homebrewing?

Cut some small pieces of wood that you can push into the hole and sandwich between the inner and outer layer of the cooler. Use them to help support the ball valve.
