Hey, all,

I'm in the process of fermenting my first dipa, og 1.081, and it's doing strange things. I never saw the krausen, but the ring is there. I literally looked at this beer within twelve hours, then again within twelve hours of then. Never ever saw it, so it came and went ridiculously quickly, especially at that gravity. Fast forward 3 days to now. Went to get a gravity reading, and this. The krausen ring is clear (albeit a cruddy picture), but I believe I'm seeing still fairly healthy and active fermentation. This is so strange to me, so I wanted to show you fellas and see if you've had similar experiences. I'm not worried about it, just very curious. It smells glorious though.

I didn't want to disturb that beautiful foamy goodness, so I didn't bother getting a reading. It's clearly fermenting.

The krausen is all that glorious foaming stuff you see there in the pic. Not sure what you are talking about my clear krausen rings? Either way -- it's perfectly normal and still very much actively fermenting. Let it go some more before any readings as that's a bit pointless.
 
It's hard to see here, but that krausen ring is present and very clear in person. What's weird about it is that I never saw it form, had nothing but very light bubbling for 2 more days after the appearance of that ring, and now this! :confused:
 
The krausen is that batch of brown foam on top of the wort. By 'ring' I think you're talking about the faint line above that on the edges of the bucket. It was probably up to that point at one time but has dropped since. The way the fermentation looks can vary greatly with different beers. Even using the same yeast. Wait until that foam is gone (up to a few weeks) to take a gravity reading.
 
+1! Wait until the krausen drops & it starts settling out clear to take another gravity reading. I used 2 packets of US-05 rehydrated in my Hellfire IIPA, & it took a couple months to go from 1.082OG to an FG of 1.016. It acted like it was done at 1.023 or so, then the weather changed again & it perked up, fermenting lower. I still think if id have used the 3 packets recommended by BS2, it would've finished faster & had more hop flavors. Lesson learned.
 
Put the cover back on. Forget it for a total of 4 weeks and then check to see if it's done. LOL No rush , relax, have a cold one.

I never had a DIPA fermenting longer than 10 days to get to final gravity.
I usually use WLP001 or US05. Normally I'm at final gravity after 7 days and I start to dry hop.
 
What temperature are you fermenting at, also how many packets did you pitch for this DIPA, and are you utilizing any kind of fermentation temperature control?
 
Fermenting at a steady 64 in my swamp cooler. Pitched 5.75 grams, which was calculated to be plenty for a 1.5 gallon batch at that gravity.

I usually use WLP001 or US05. Normally I'm at final gravity after 7 days and I start to dry hop.

I give all ales 3-4 weeks for the yeast to "clean" up after the ferment is over and FG has been reached. Then a cold crash and my beers are super clear.
 
i just took a look at my Hellfire IIPA a lil while ago,& they're crystal clear in the bottles. looks to be an amber/copper color. Didn't even remember the Whirlfloc this time either.:ban:
 
Gotta wait till 12/14 to get it in the fridge at the three week mark for Christmas eve. Really can't wait to try it carbonated! But outta the bottling bucket, the heat was nicer than I thought. The hop flavor combos gave fruity/citrus aroma/flavor like super hots taste. we'll see what the carbonation does...:mug:
