Hi all,

I want to brew up an DIPA (5.5gal) using the hops I have left .
Sorachi Ace 2oz 12%
Amarillo 0.65oz 6.7%
Nugget 0.3oz 12.6%
Citra 1oz 13.7%

I know that's not a lot of hops. :-(

Any suggestions for bittering, aroma and dry hopping?

What are the alpha acid percentages of each?

At any rate, it won't be much of a DIPA with only 4 oz. of hops. I think you can pretty much forget about dry-hopping.

I would use Nugget and Sorachi Ace for bittering. All of the Nugget and enough Sorachi Ace to get the kind of bittering you want. I would use Citra, Amarillo, and whatever Sorachi Ace is left for aroma and dry hop.

Thanks. I was thinking the same.

I would FWH with the Sorachi, boil for 60 mins. Turn off the heat and take each variety of hop remaining and divide them in half. At flame out, I would toss in half of the hops and let them sit for 20-30 mins. When the temp gets down to 180*, toss in the remaining. Again, steep those hops for another 20-30 mins. These hop stands will add a ton of flavor and aroma to the finished product.
Also, every five minutes or so, stir your wort for like 30 seconds while the hops steep.

You know I just realized that you have 2 ounces of the sorachi. Only use the one ounce for your ipa. Take the other ounce and divide it as described. I just don't know how Sorachi pairs with citra and amarillo. Not really enough nugget to make a difference. Hell I can't imagine it would be bad!

I made my recipe now and I'm getting an IBU over 80 and I have still 1oz for dry hopping. Well, not a lot for dry hopping, but it will still be good beer I think.

Can we see the recipe?

Sure, but don't be too hard on me. I just used the stuff I have left as my store is closed at the moment. And I really want to make a DIPA.

I think the grain bill looks great. I would consider-and it's really up to you- bittering with the one ounce of Sorachi only ( and maybe the nugget due to its higher AA and because you don't have a lot, though it actually may benefit in the hop stand) and move everything else to the end and hop-stand. Bitterness still gets extracted during a hop stand AND you get a ton of aroma and flavor to boot. Interesting selection on the dry hops in a good way, but given that you have less than a half of an ounce total I doubt you'll get much aroma with that.
I would like to know how it turns out.

Brew on :mug:

Id move .50 oz of sorachi @ 60 and the 30 min to 5.

I'd use everything I had left @ 5 instead of 15 & flame out.

Possibly move the dry hops to flame out/hopstand. You could always get your dry hops later.

I dont think 4oz is nearly enough for a DIPA, or even like a session IPA. IME to get a in your face hops flavor (not just bitterness) akin to commerical IPAs youll need at least twice that much

and i second that hopstand. I wouldnt consider doing an IPA without it

So, I wanted to share the outcome. I finally waited to get some more hops but I was sticking a little to my original recipe.

It came out very good. Strong head which stays forever if the glass is clean.
Very tasty and easy to drink.

I left the hops in the kettle (hop bag) for 10 minutes after boil and also while I cooled the wort.

I will brew that again!
