Got home from my brew store and weighed my grains and looks to to 12oz. short. The flaked corn looks shy.

What type of corn product can I use to make up the difference.

You can use grits. If you can instant grits you can add right to the mash, if they are not instant they must be cooked first to convert the starch and then add to the mash. You could do the same with corn meal too.
 
I've got corn meal medium grind. So cook it in boiling water for a while and add it to the grain bill then mash?
