I have had a kolsch fermenting away for the past 12 days (~55-57F). I'm given to understand that the yeast strain I'm using can benefit from a diacetyl rest. So I raised the temp to ~62F. It's gone from 2 days of dormancy to ~20 bubbles/minute in the air lock. I've never seen such a rebound like this. It's all good though, right?
