Diagnosing my first keg issues

I've looked at several other posts but still can't quite figure out what's going on with my beer. I brewed a Belgian wit and used it for my first kegging effort. Put it in the kegarator at around 32-34 degrees @ 10 PSI for 8 days. Had a good head on the first pour but a ton of bubbles in beer so I thought I had over carbed it and released the pressure valve twice in last 48 hours. Just poured a glass with some head but it looks light colored and is a little bitter. What did I do wrong?

I would say it needs more time to carbonate. 8 days at 10 psi without rocking / shaking it might not be enough time to fully carb it. I would give it a little bit more time

Yep. About 12-14 days is pretty normal at service pressure. 32-34 is pretty cold for serving anything that has real beer flavor (which is why BMC stuff is best consumed ice cold). Most folks dispense around 38-42.

The little bit of bitterness may be a touch of carbonic acid that can form when you first gas up a keg. Give it a week or two and it should go away.

I don't like the rocking or shaking methods, but to each his own.:mug:
