Determening style

I was wondering how can I determine what style am I brewing when using some leftover malt instead of following recommended recipe? I was left with some Carafa III and some crystal so I went on to use that and the results are pretty satisfying but it left me with this question in mind.

this could be anything from a dark IPA to a sweet black lager depending on how much of each, yeast, hops, etc.
