I've tried Denny's favorite WYEAST in a few batches. I'm happy with the mouthfeel and the maltiness of the beers. However, every single batch I made with it has a sugary flavor. There's no sugary flavor before bottling, but somehow after priming and bottling this flavor develops, and appears only when I opened carbonated beers. Again, the flavor is not present in the secondary when fermentation is done, but the finished, conditioned beer tastes straight up like sugar was added to it. I don't like it.

I thought of other factors, but I'm pretty sure it's the yeast or the yeast interaction with my priming sugar (regular table sugar – domino's, if you really want to know).

- Do I have to wait more for conditioning? I've waited over a month and that flavor is still there.

- Does Denny's Favorite produce this flavor with table sugar for priming? Would it not produce the flavor if I used corn sugar? (I've always used table sugar, but never had a problem with other yeasts.)

- Or, does this flavor normally develops with this yeast while conditioning, regardless of type of priming sugar, and other people don't mind it?

Any help will be appreciated. I have a black IPA one week from bottling and I used a packet of Denny's and a packet of American Ale II (because it was high gravity). Right now it tastes amazing, and I really hope it won't have that sugary flavor after I bottle.

Thanks,
b.

I've used this yeast numerous times, and never noticed what you are talking about. It leavess a nice maltiness, but I've had good attenuation lately. My APA went from 1.055 to 1.011. I used corn sugar for bottling, but have also used DME.

I too have had really nice results with this yeast. Even though it is a regular on the Wyeast product line I have trouble getting it at the LHBS - it is apparently popular. I need to remember to order it next time I place an online order.
