1. Apple juice (no preservatives) ... Preferably fresh-pressed with a nice varietal blend.
2. Yeast (Red Star Premier Cuvee is great in my experience but really anything works and depends entirely on your preference)

Ferment at a cool temperature. Wait until finished.
Consider adding fruit, spices, or oak.
Bottle prime to 1.5-2.5 vol CO2.
 
Yeah I wouldn't add sugar. It'll up the ABV but you'll be making jet fuel. It wasn't a pleasant taste when I tried adding sugar. Straight juice should give you a good ABV of @5.5% and you'll preserve more of the flavor.
