im hoping to create a dark wheat beer of my own using pre hopped coppers extract. as this would provide a yellowy gold beer, what could i add to create the dark effect similar to the wheat beer that erdinger produce? i thought if i used dark dried malt extract instead of sugar at brewing it would sort it would this effect the colour and flavour?
 
I would try steeping 2 ounces of chocolate wheat malt (which is also tasty on ice cream) or a de-husked barley like Carapils III. Dark extracts will give you browns, porters or stouts.
 
Steep you speciality grains in your water while it is between 150-170 degrees for about 15-20 minutes, then remove them; then go along normally by bringing it to a boil and then adding you liquid and/or malt extract.
 
Use the chocolate wheat malt for coloring and flavor with that extract. They are usually 500L to 540L color. Assuming you are making a 5 gallon batch and you are shooting for a dunkelweize go for 1/4 to 1/2lbs of choco malt. If you want to just add color try 2 to 4 oz.
