A simple cyser.

Seems simple and classic.
Maybe add some citrit acid/ lemon juice and it might be all.

How much citric acid? My grandmas been canning so its sitting on the counter

Only add acid to taste after the ferment finishes. If you add it up front, you can drop the pH so low the yeast stall.

Better brewing through science!

I add half a tea spoon for a gallon in the beggining, and a tea spoon after the ferment, have no problem with that.
But I have no scientific calculations what and how much does it change in pH levels, I read somewhere to add it to cyser and so I have been doing.

It's an old practice that has since been abandoned due to the resulting pH issues in traditional mead. Ferments are fairly robust with apple cider so you will probably be ok.

I added the energizer up front, then about two days later i got more nutrient and added the recommended dose
