Crystals in cider?

This is my third batch ever, but my first time using honey. I'm at about a month into the primary using Mott's / honey in a 5 gal carboy. I used potassium sorbate a week or so ago, and slammed some more in today to try and stop fermentation. However, today I noticed some weird crystals forming on the walls of my carboy. Too much potassium? Or acid crystals? Something else?

I suspect it indeed may be sorbic acid crystals, although I've never seen anything like that so I'm not sure.

You cannot stop an active fermentation with potassium sorbate.
