Been brewing recipes I've found on the site for about 6 months so far and this is my first time creating one on my own using BeerSmith. Here goes

Pale ale
Est OG 1.056
IBU 39.5
color 10.6
ABV 5.6%

6 lbs light DME added at boil
2 lbs crystal malt 20 at boil
2 lbs rice at boil
.75 warrior (60 min)
.5 citra (15 min)
.5 citra (flameout)
2 oz citra dry hop 7 days

The crystal and rice should be steeped or mini-mashed instead of boiled. Is that just a mistype?

Also that seems like a lot of crystal even to steep. A pound or so is more typical.

For the rice, you'd need cereal mashed or pre-cooked rice to get the sugars out of it. I would cook it first and add it (in a bag or something) during the steeping process including the water it was boiled in. You could also just use rice syrup.
 
Yes, you never want to boil grains. Steep them or mash them. Rice needs to be treated differently than steeping grains as already mentioned.

To keep the wort on the lighter side put 1/2 the DME in at 60 minutes and the rest at flameout. Malt extracts make the beer darker than their all grain equivalent.
 
You would need to add some base malt to mash with the rice, but I wouldn't use rice in a pale ale anyway. I say drop the rice and cut the crystal to 1 lb (steeped prior to boil).
 
Thanks for the input. Yes the boiling of grains was a typo. Just out of curiosity, what effect do you think the rice would have on this beer? How about corn?
 
Rice/corn needs to be the flaked kind to go straight in the mash, otherwise it should be boiled first before being mashed.

Both are very fermentable without adding much flavor so I think they would lead to a dry, high alcohol beer.
 
Used in place of some of the malt in a recipe corn and rice will lighten the color and body without adding much flavor - as in typical American lagers. They wouldn't generally be used in APA's. That doesn't mean you have to stick to style, but just steeping the corn or rice you're not going to get anything - you need to mash with a base malt.
 
Agree with the above. Skip the rice and cut the crystal malt. Since you're using crystal 20 I think 1 lb would do. I'd probably go closer to 1 oz of Citra at flame out just for more flavor and aroma but that's just my preference. 0.5 oz will be just fine, it just depends what you want.

Without mashing the rice or corn will not do anything. Leave it out.

2 lbs of crystal is wayyyyyyu toooooo much. Use a pound max.
 
thanks again for all the info. I brewed this a few weeks back and its kegged and tastes awesome. Very nice smooth citrusy/fruity flavor. Awesome beer for lounging by the pool. GF said it was the best beer I've brewed so far.
