So I've noticed that a lot of the recipes for making wine say to leave in the primary 5-7, or 3-5 days or some variation.. They say to cover during that time, does that mean tight with an airlock, or just cover to keep flies etc out. Thanks
 
If you're using real fruit (not just juice or concentrate), then cover it with a towel so you can gently push down the fruit that floats to the top (punch the cap) daily for a week or so until you strain out the fruit. If you're not using fruit you can go straight to airlock.
