cover kettle for last 15-20min of boil

Ok I know not to cover the kettle at all right. Then I read that covering for the last 15 min or so will help keep the hops flavor and aroma in. So my question is should I do this and will the DMS be gone by then??

I'm not sure if all the DMS is gone by then but as a rule of thumb, I always uncover and keep uncovered at the start of the boil.

I don't see any real advantage to keeping a cover on for the last 15 minutes.
 
You won't really loose any hop aroma/flavor in the boil. I don't cover the BK till after I add the remaining DME/LME at flame out. I let it steep for 10-15 minutes while I sanitize the fermenter & such. Then into the ice bath.
 
I HAVE to cover my BK as of now, I'm using it on my glass stovetop. I do extract and steeping brews only to date. I'd guess about 70 gals so far.
I only get 3 gal boil, and that takes FOREVER! I don't cap the pot. I leave about a 1/2 gap on one side.

Almost as soon as I take the lid off, The boil goes away. AHHHHHHHH

All my 5 gal batches have tasty pretty damm tasty. So I notice no difference.

But then again, I don't know what DMS tastes like? LOL

BUT, After TOMORROW, I'll be on my way to trying the AG brewing.

Thanks to the magic of Christmas, I will now be able to do simply AG brews!

Where exactly did you read this? If you're worried about losing hop aroma, add more at flame out.
 
Covering your boil will not kill your beer. However it's one of the many many tiny little things that will make your beer great. It's like fixing your water before you brew - will you have good beer with out fixing?? For sure - HOWEVER - fixing the water is a tiny thing and all of those tiny things add up.

As a person does more and more brewing and really gets into it he will naturally add more tiny things and his beer will get better. It's what we do. Once we get to a comfort lever we need to add another tiny tweak and each tweak adds to the quality.
 
OK cool, I always leave the cover off the kettle, but read some where it was good to leave it on for keeping the aroma in just in the last 15 or so. Thanks to this wonderful sight I will never put the lid on!!! LOL
Ummm not to get off subject but what does DME/LME do at flame out? I always just RUN my kettle to the bathtub and start trying to cool it down as fast as possible.
 
It's called late extract addition(s). It makes for better hop utilization in partial boils,lighter colors,& cleaner flavors. Just something I figured out on my own,then came to find after some heated discussions that others had tried it as well. Then,after stiring them in thoroughly,I put the lid on to steep the wort for 10-15 minutes to sanitize it since it's still around 170F+.
 
Not really,no. It's the twang thang they're worried about,or at least what they think it is...But I always thought that Dumb Motherf*** Syndrome could happen to anybody?:D;)
 
Ok then that's what it was, I have never done an extract brew, my dad does and the rest of my family dose not....my next thing is figuring out the best filter coming from boil kettle to chiller!!!
 
An advantage of keeping the pot covered is keeping the condensation from your range hood out of your brew.

The condensation/evaporation is where the DMS is. You want that to go out of your beer. If you cover it, it will never go into the air. I get condensation on my microwave when I do partial boils . I just wipe it once in a while.

+1. I have the same set up,so since I'm sitting there anyway,I just wipe it down periodically. And yeah,covered boil allows DMS condensation to drip back into the brew.

Too bad DMS isn't an issue for extract beer or you would be correct.
 
I caught DMF syndrome from a bottle of Weller on Christmas Eve - it appears to be cured by time, Tylenol and coffee.
 
What I do is cover the pot 3/4 of the way with the lid. This brings me to a boil faster and the last Munich Helles I made was clean as could be. DMS as I understand is more prevalent with Pilsner malt. I only do 60 minute boils also, and have never had a DMS laden beer. It does take 30 minutes for me to hit boiling though but I don't start my 60 minute boil timer until the wort is at rolling boil and I throw in my first 60 min hop addition.

I would not completely cover though.

I only cover the pot for about 3 minutes at the end of the boil to "sanitize" the lid via temperature.
